Shirley J Wednesday - Wilted Spinach & Bacon Salad

Wilted Spinach & Bacon Salad

I've been a slacker on Shirley J Wednesday! Lo ciento. I seriously have been using Shirley J Products like every other day, I have just been lazy slash busy. But I'm really excited to share this recipe with you. We've hired a chef to develop recipes for us and this salad is one of the first 50. I love it! It has a wonderful blend of veggies and fruit, sweet and spicy and more! The recipe is below...and I love the use of Shirley J Pizza and Pasta Seasoning! If you want to see more recipes head on over to the Shirley J blog and Web site. We should have a lot more on the site by next week as well!

Wilted Spinach & Bacon Salad

Ingredients
8 Strips of Bacon
12 oz Bag of Baby Spinach
1/3 cup Dried Cranberries
1/3 cup Red Onion Diced
1/4c Balsamic Vinegar
1TB Water
1 tsp Brown Sugar
2 TB Shirley J Pizza & Pasta Seasoning
1 Fuji Apple seeded and diced
3oz Feta Cheese Crumbles

Directions:
Combine spinach, dried cranberries and red onion in salad bowl.

Cook the bacon, set aside grease, when the bacon is cool crumble in a bowl with the spinach, cranberries and apple. In a small sauce pan, combine the bacon grease, onions, vinegar, water, sugar and Shirley J Pizza and Pasta Seasoning. Cook on low heat for about 4-5 minutes.

Right before serving toss the warm dressing in the salad and portion on plate. Garnish with Cheese

***Becky's Notes: I used turkey bacon and use olive oil instead of bacon grease for the dressing!***

I kind of think bacon makes everything better. This looks delish.
