Fruit Salad with Poppy Seed Dressing


I'm not sure how and why I was searching for a different take on fruit salads. But one day I came across this recipe for Fruit Salad with Poppy Seed Dressing by Sunny Anderson on Food Network's site.  What drew me in was the fact that it had a poppy seed dressing. 

For some reason I'm ultra paranoid about not going through my spices, seasoning and nuts fast enough in fear of them spoiling or going rancid. So whenever I get the chance to use say, an ingredient, like poppy seeds (especially in a non-traditional way) then I do it.

This salad is loaded with three delicious, fresh fruits: green grapes, strawberries and blueberries. You toss the fruit in sugar then pour a ice lime juice poppy seed dressing all over. Yummers, right? Well it doesn't stop there. You then proceed to top it with toasted pistachios. I love the texture contrast this creates...and I love pistachios!

I'd love for you to try this great Fruit Salad with Poppy Seed Dressing. I've already made this a second time and will do so again! It will be perfect for any summertime BBQ.


Fruit Salad with Poppy Seed Dressing

Ingredients:
1 cup halved green seedless grapes
1 cup quartered strawberries
1/2 cup blueberries
2 tablespoons sugar
1/4 cup fresh lime juice
1 teaspoon poppy seeds
1/4 cup unsalted pistachios, toasted

Directions:
Toss grapes, strawberries and blueberries with sugar in a medium bowl. Stir in lime juice, and poppy seeds. Let sit at room temperature for at least 1/2 an hour. Garnish with pistachios and serve.

I have so many poppy seeds right now that I bought for adding seasoning to bagels. This sounds like a great way to use some of them up!
