Mirror mirror on the wall. Whose the darkest cookie of them all?
This week's salt and pepper cocoa shortbread of course! Are you dying at the utter darkness of these cookies? See they weren't intended to be this dark. But I forced myself to use black cocoa (it was the only cocoa I had on hand) and I am so glad I did.
These cookies were dark, spicy, chocolaty and had a hit of salt at the end. I loved them. My husband thought thye were okay and about half of my coworkers hated them. They definitely are not that sweet, but that was sort of refreshing for me. If you like bittersweet chocolate, you will love these cookies. I have to say that I loved the texture too. I was so proud of it. Next time, I would make these and dip them in chocolate or turn them into a cheesecake crust!
You can get the recipe from Tia's blog or better yet purchase Baking from My Home to Yours by Dorie Greenspan. Make sure you check out the Tuesdays with Dorie blog to see how the other bakers liked these Salt and Pepper Cocoa Shortbread cookies.
More about black cocoa powder here and here .
Next week: Flip-Over Plum Cake (MY SECOND PICK!)

I need to get some of that black cocoa! Looks great. And these would be great as a crust for cheesecake.
I love how dramatically dark yours turned out.
They are really dark! Beautiful cookies - and I love the colorful plate in contrast.
I used dark cocoa powder too and mine are super dark! I think mine could have used more pepper, but I was surprised by how much I liked these.
Wow. I've never heard of black cocoa, but I want some now. Those are gorgeous cookies!
They looked a lot better than they tasted, but then again this is a guy who likes to eat Kraft Cheese Singles as a snack.
THESE WERE AMAZING!!!!!! :) I loved em, I think I ate a good 3/4 of them.
Your cookies are absolutely beautiful, Becky! So glad they were a major hit for you. Can't wait for your pick next Tuesday! :)
they are so dark and beautiful!!!
such a cool color! they look awesome
Wow, those really did turn out dark! I debated whether to use the black cocoa, but opted for regular instead. Next time.
The chocolately dark the better - these cookies look marvelous!

Great looking cookies:) Just lookin for your flip over cake:)
Ok Becky asked for it so--ick. Hated these cookies. Cookies are supposed to be sweet, buttery, and remind you of all the comfort of grandma's kitchen. She lured me in with this delicious looking shortbread cookie and just when I think that rich, crumbly, goodness is about to hit my tongue--bam I get a bitter, unsweet shock. It left me...well a little bitter. She tried to get me to try a dark cookie again I wanted no part of it. I've become a cookie rascist.
