Tuesdays with Dorie: Far Breton


Flambeed prunes in a French-style flan. That is how I described Far Breton, this week's Tuesdays with Dorie pick, to my girlfriends this evening before we each took our first bite. I honestly didn't even think twice about this recipe or really even recognize it until Nicole of Cookies on Friday chose. I think Far Breton is one of those hidden gems in Baking From My Home to Yours. And it makes sense too, because there is no picture and it has an obscure name.


I was so happy to realize how easy this Far Breton recipe was to put together. The night before (or just 3 hours...) you blend eggs, milk, sugar, salt, baking powder, vanilla and flour together then place it in the fridge to chill and set. It's just like making crepes.


The next day you can either soak prunes and dark raisins in Earl Grey tea or flambé them in Armagnac. I chose to use my homemade vanilla and it worked great. You simply pour the batter in an round cake pan, place the dried fruit and bake for an hour. The cake looks like a giants souffle as you take it out of the oven. It's beautiful.

What a unique and delicious desert. I think I ate a full 1/3 of it before I realized what I was doing.
