September has been full of lots of great cucumbers at our house. I've been getting lots of great cucumbers from my CSA share at La Nay Ferme. I'm getting a good little variety of cukes, too!
I wanted to make a quick and simple side dish for dinner one
night. As I opened my fridge a larger than life English cucumber caught my eye.
That was my start. Then I realized I had some other produce like fresh thyme
and baby heirloom tomatoes that needed to be used.
So washing and chopping I went. As much as we were in the
mood for something fresh, I also wanted something creamy. Ah, sour cream. There
you have it folks. Try my Cucumber and Tomato Salad with Herbed Sour Cream. It’s
fresh, it bright, it’s aromatic and the combination of sour cream, thyme and
garlic against those crunch cucumbers and sweet tomatoes make this side dish a
summer special.
Cucumber and Tomato Salad with Herbed Sour Cream

Ingredients:
1 large English cucumber (peeled or stripe peeled)*
20 cherry heirloom tomatoes, cut in half or quartered
1/3 c. sour cream
2 TB thyme
1 clove garlic, minced
Real Salt (to taste)
freshly cracked pepper (to taste)
Directions:
Combine cucumbers and tomato in medium bowl. Mix together sour cream, thyme and garlic. Salt and pepper to taste and pour over vegetables, stir and serve.
*Make sure to test cucumbers if you decide to leave peel on. Peels can often be bitter.
