Pink Grapefruit & Pear Green Smoothie

Happy Monday! Today, I'm teaming up with Lindsey and we're both sharing smoothie recipes. You know I love a good smoothie and what better month to try new healthy smoothie recipes than in January.

Citrus and pears. The fruits of winter. Perhaps my favorite citrus is grapefruit. It's hard to not be won over by that sweet, tangy juice. And then there's the pear, a fruit whose texture I have adored since childhood. I'll eat pears in any variety, in any preparation. Blend the two together in the company of my favorite green smoothie ingredients, and you've got a great winter green smoothie that's sweet, refreshing and feels cleansing to your whole body.

The key to this grapefruit and pear smoothie are very ripe, very high-quality fruits. The inspiration for this smoothie came from high-quality, organic and beyond gorgeous pink grapefruit that I had splurged on. Believe you me, if you have a bad grapefruit your smoothie will taste like it. Other fun additions to this smoothie were for sweetness. I added a favorite baking ingredient, vanilla bean paste for some sweet complementary vanilla flavor and agave to bring out the natural sweetness of the fruit.

If you're in a green smoothie rut, or not, put a winter twist on your next one with my Pink Grapefruit and Pear Green Smoothie! And don't forget to check out Lindsey's new recipe for Vegan Peach Pecan Breakfast Smoothie.

Pink Grapefruit & Pear Green Smoothie
by Becky of Project Domestication

Ingredients:
1 c. vanilla almond milk
1 TB. chia seeds
1 tsp. vanilla bean paste
1/2- 1 TB agave nectar (or other sweetener)
1-2 c. spinach
1 Bartlet pear, chopped
1 organic pink grapefruit, peeled and cut in quarters
5 ice cubes (or as needed to make the smoothie very cold)

Directions:
Place ingredients in blender according to order listed. Blend on "smoothie" setting until smooth in Blendtec or other blender.  May need to blend twice.

Note: After the fruits are very ripe, I like to stick them in the fridge. This helps the smoothie become cold without additional ice. You could also freeze the fruit and almond milk the night beforehand.
