Strawberry Poppy Seed Dressing Recipe {Stevia-Sweetened}
I hate to admit it, but I've been off my normal salad-for-lunch routine. I think it slowly happened over the holidays, then with winter cravings for sandwiches, soups and comfort foods it got lost. Possibly a bit of laziness came into play. If there's anything that bounces me back it's the hope of spring and fun homemade salad dressings.
One of my favorite salad dressings is the Strawberry Poppy Seed Dressing found on simplebites.net. It's quick, it's easy and it's perfectly sweet full of strawberry and poppy seed flavor. Since my first time making it years ago, I've adapted it slightly to meet my needs. It's free of sugar and sweetened with stevia. I also upped the poppy seeds so they are a bit more prominent in bringing that distinct nutty taste.
Stevia-Sweetened Strawberry Poppy Seed Dressing

Ingredients:
1 c. strawberries
3 T. red wine vinegar
3 T. stevia
1/2 tsp. kosher salt
1/2 tsp. ground mustard
1/2 c. canola oil
1 tsp. poppy seeds
Directions:
Put all ingredients in high-speed blender, except for poppy seeds and blend "sauce/dressing' mode, if using a Blendtec. Pour poppy seeds in and pulse a twice. Pour in container and serve. This dressing stays good for a few days, if it lasts that long.
Note: You could also exchange other natural sweeteners for stevia like honey or agave. And chia seeds would be a fun substitute for the poppy seeds, though they will alter the thickness of the dressing.

I need to experiment more with stevia. I've seen lots of people adding it to smoothies lately. This salad dressing looks like a perfect way to try it!
